Candyland – Vanilla Cake With Milka Chocolate & Orange Flavored Buttercream

This cake is ideal to celebrate any birthday, be it 5 or 75 years. It will make everybody happy (except those who are detoxing 😉 ).

I baked this vanilla cake, it’s perfect for a two-layer 9 inch cake or a three-layer 8 inch cake. I added 100 g of Milka Caramel Cream Chocolate, roughly chopped, to the dough just before I divided the batter between the cake pans. It’s so so so delicious! Continue reading

Ice cream cake with chocolate glaze and pecan-caramel crumble

I love ice cream and I love a good cake, so in many ways an ice cream cake is the perfect combo.

This cake is incredibly simple. I made this chocolate cake, because it’s simple and wonderful and the recipe fits exactly into three 8 inch round tins. The night before I took two of the same tins and lined them liberally with aluminium foil, making sure to leave plenty of space be able to pull the foil out later on. Then I filled them with softened ice cream – just leave it to stand on the counter for 10 minutes first.

Hummingbird cake with cream cheese frosting – recipe

I met this super nice couple from the United states this summer. They were here in Iceland to get married so we talked cake 😉 They told me that they were planing on a wedding cake with three different flavors, one of them being Hummingbird cake which I (shamefully) had never heard of. My understanding is that the recipe for the cake originally came from Jamaica and later on traveled to the United states and got quite popular in the south.
The cake it self is packed with bananas, pineapple and nuts (pecans or walnuts) and infused with vanilla and cinnamon. It is super moist and loves to be covered in delicious cream cheese frosting. Yummy! Continue reading

Devil’s food cupcakes with a magnificent chocolate caramel frosting

The other day I stumbled upon this incredibly edible recipe for chocolate frosting by the super baker and blogger Manuela at Passionforbaking and I just had to try it. I used 70% chocolate which made the frosting a tad bitter, but that didn’t bother my family – they finished every last bite. This frosting is a mixture of dark chocolate, homemade caramel and butter. Sugar cookies – recipe

The best thing about sugar cookies is that they are so versatile, both in flavor and looks. On the flavor side you can add a vanilla bean to the dough, the zest from a lemon, lime or an orange, add cocoa powder for chocolate sugar cookies or even add almond or coconut extract.  And on the look side you can cut out any shape, decorate them with stamps (someone’s initials for example), with Royal icing or with sugar paste. Lemon cake with blueberry compote and vanilla swiss meringue buttercream

I just love all things lemon. Lemon cake, lemon water, lemon cheesecake, lemon macaron, lemon … well you get the drift. After saying that I need to share with you my recipe for lemon cake. This is really “just” a sponge cake but I add the zest of 2 lemons to the batter and I always soak the cake with lemon sugar syrup. Yummy!

Nigella’s Nutella Cheesecake – recipe

My husband and I love to watch cooking shows. Our version of a cozy night in is to cuddle on the sofa with a glass of red and watch Nigella, Gordon Ramsay, Barefoot contessa, Anthony Bourdain or Jamie Oliver cook up a storm. One night we were watching Nigella (cook, eat, give us a sexy look, bake, eat…you know what I’m talking about 😉 ) and she made this super easy Nutella cheesecake.
