It started snowing in Iceland this weekend. The snow obviously reminds me of Christmas and few things say Christmas like the smell of baked cinnamon. This super moist Carrot Cake gives the house a wonderful cinnamon aroma when it bakes, so I had to bake it right away 😉 The cake is made with puréed carrots and not shredded so it’s very soft and moist. Chocolate cake with Oreo buttercream frosting – recipe
When I asked my daughter (13) what kind of cake she wanted for her birthday she (almost) shouted; “Nutella cheesecake!” Ok, I get it. I also love that cake but I was hoping to be able to decorate at least one cake for her birthday so I asked her if she would be up for a more traditional birthday cake. “Like what?” she asked. Hmm…how about a chocolate cake covered with Oreo buttercream frosting? Her jaw dropped because she LOVES Oreos 🙂 Then that was decided, one Nutella cheesecake (recipe in my next post 😉 ), chocolate cake with Oreo buttercream frosting and then I decided to also make lemon cake with blueberry compote, vanilla sugar cookies, Oreo filled chocolate pyramids and my husband rigged up some Chili con carne – that’s right, nobody left the party hungry 😉 Continue reading

These wonderful cappuccino cupcakes are a big family favourite, at least among those of us who like coffee 🙂 They are perfect with cup of the black stuff on a lazy Sunday afternoon, and the simplicity of them makes it all that easier.

Woopie (pie) it’s Friday! – recipes
Today I’d like to share with you a recipe for chocolate Woopie Pie. Woopie Pie is really a cross between a cake and a cookie. It’s firmer than a cake but softer than a cookie. These are great for birthday parties where everyone gets their own pie to eat with their hands. They are also perfect for picnics and other outdoor festivities.
The cake is assembled with really any kind of frosting or icing and I must admit that it was not an easy choice this time – the opportunities are endless. Today I decided on a marshmallow vanilla frosting, and it’s a fairly soft type of frosting so I wouldn’t recommend it if you need to transport the cakes. In case you want to take them to a picnic, you’d be better off with a vanilla, chocolate or caramel buttercream. Continue reading
Delicious yet oh so simple chocolate cake
I would like to share with you my go-to recipe for the most delicious yet oh so simple chocolate cake.
This one has never failed me. Never ever. It´s an “all in one bowl” kind of recipe which means that you put all the ingredients in one bowl and just mix until ready – for the oven that is, don’t eat it raw 😉
If all I want to do is “throw” a chocolate cake in the oven and I just can’t be bothered with a “first mix this and then this in a separate bowl ….” kind of recipe then this is my go to recipe. But that said, I also use this one for wedding cakes and birthday cakes. I guess I use it more or less for everything except maybe cupcakes, it’s maybe not firm enough for that. Continue reading
